Easy seitan recipe for the bread machine

 

Seitan is fascinating, tasty, and a substantial amount of protein, but also a pain in the ass to make by hand. Fortunately, my bread machine allows me to just throw all the ingredients in and  have a fresh baked loaf(?) of seitan with virtually no effort. This is a simple recipe I use; the spices can easily be changed around to suit your taste.

Seitan for Lazy People

1 cup of water

¼ cup of soy sauce

¼ cup of apple cider vinegar (white vinegar may substitute but will change the flavor a bit)

1 Tablespoon of spicy brown mustard

2 cups of vital wheat gluten

½ Tablespoon of smoked paprika

2-3 teaspoons of Italian seasoning

½ teaspoon of each : garlic powder, onion powder, black pepper

 

  1. Add the wet ingredients (water, soy sauce, vinegar, mustard) to your bread machine first.
  2. Add vital wheat gluten, then spices
  3. Choose the basic cycle ( or express if you are pinched for time) and let it go!

 

*Because of variations amongst bread machines the seitan may not be fully cooked at the end of the cycle. If this is the case just let it run through a “bake” only cycle and it should be fine.
