I confess, like most other vegans I harbor a strange fascination with making things into “burgers” that are made of just about anything but meat. Unfortunately some faux burger recipes are ridiculously complicated and turn out to be a sloppy mess. This recipe here is made mostly of lentils and kale; it is quick, easy,healthy, and only requires about five ingredients. Best of all, you can freeze them to keep for a quick meal later.
Lentil Kale Burgers 5 ingredient
1 cup cooked lentils
1 cup frozen kale (or fresh just steam it so t is wilted)
¼ cup chickpea flour (for a higher protein version use unflavored protein isolate)
2 Tablespoons tahini*
salt and pepper to taste
*peanut butter may be used instead but the taste will be different slightly
Preheat oven to 375
Mix together lentils and kale, mashing the lentils a bit while mixing.
Add in tahini and spices, then flour
Form into 4 patties about a half inch thick and place onto greased cookie sheet
Bake for 20-25 minutes or until edges looks golden
They are super portable and can be packed for lunch later. Along with some delicious grilled veggies!
