This spread is high in protein and versatile. It has a light lemony taste, pleasantly paired with herbs. The added nutritional yeast gives it more flavor and nutrients (B12!). I used it as a filling in lasagna, but it would go terrific on toast, in a sandwich, or as dip for veggies or pita.
Tofu Herbed Spread
3 Tablespoons of nutritional yeast
1 package (14 oz) of soft tofu
1 Tablespoon minced garlic
2 teaspoons of lemon juice
1 teaspoon of oregano
½ teaspoon basil
salt and pepper to taste
1. Add all ingredients to blender. That’s right, all of them!
2. Blend until smooth
It is incredibly simple. For visual reference this is what “smooth” should look like.
Nutritional yeast gives it a cheese-esque, but is also nutrient dense, hence the name.
I used mine in a grilled veggie lasagna. After baking the tofu spread firms up, forming a egg-like texture.
